Boxing day recipes - Christmas Pudding Soufflé

‘Combine this with a good quality spiced brandy butter or rum and raisin ice cream for heaven on a plate.’
50g caster sugar
250g Christmas pudding
3 egg yolk
4 egg white
Melt butter and brush into ramekins.
Sprinkle generously with sugar. Place Christmas pudding in food processor and blitz until smooth.
Add milk and blitz together. Add yolks and mix.
Remove mix from food processor.
Whisk egg whites with sugar until stiff peaks are formed, then fold gently into soufflé base in 3 batches.
Place in soufflé moulds and bake at 190C for approx 14 mins.
Serve with ice cream.’
