Tell us a bit about yourself:

I grew up in Derbyshire and trained at High Peak College. I’ve since lived and worked in America, South Africa and all over the UK. My position at the New Bath Hotel is something of a homecoming!

Tell us about your menu:

Our Artistry menu is designed to deliver many small pockets of flavour in each course. I prefer to eat smaller plates of food as it keeps the palate excited.

Which dish would you most recommend?

I love the tortellini dish. Very simply, it’s pesto tortellini but the sauce is on the inside with texture garnishes on the outside. Eaten as a whole it explodes in the mouth!

What has been your biggest culinary high point?

Getting a Michelin star at Glenapp Castle, Ayrshire whilst I was sous chef there.

What has been your most memorable meal?

It was at a restaurant called Funky Gourmet in Athens with my wife. It was such a fun menu, we both smiled all the way through, and it was spot-on in flavour.

What would you choose for your last meal on earth?

A rib-eye steak with bearnaise sauce and proper, crispy chips.

Who would be your dream dinner party guests?

Gordon Ramsay, Heston Blumenthal, José Mourinho, Michael Jordan, The Rock and Tiger Woods.

What advice would you give to a novice?

Have the right attitude. If you want to push and learn, someone will always find the time to teach you. u
