David Fox is head chef at Mercure Burton upon Trent Newton Park Hotel in Newton Solney

What was your first job?

I was a commis chef at the King’s Head Hotel in Loughborough.

What fired your interest in the food business?

At first it was cooking with my Mother and Grandmother, and then at school we had some lessons. I have great early memories of my Grandmother’s Sunday dinners.

Did you have any outstanding successes or disasters in the early days?

Yes! My first time making profiteroles was a complete disaster.

What makes your menus special?

There is something for everyone. We also grow our own produce in a small herb and vegetable garden at the rear of the hotel.

Any tips for success in the industry?

Work hard, listen and watch closely. But most of all, love what you do.

What is your favourite food and drink?

Sunday roast and a cup of tea!

What changes do you think would most help your industry?

Courses should be five years long instead of two or three, and they should have more emphasis on work-based learning.

Which ingredient could you not do without?

Fresh herbs.

Who would you most like to cook for?

Derby County FC’s players as I’m an avid fan.
